Roasted Butternut Squash - 3 Ingredients

The first time I had butternut squash, I was well and truly hooked. Sweet and yet savory too, it was a real treat for my taste buds. I’ve since eaten it prepared in almost every way imaginable, but this recipe is probably my favorite.

For this recipe, you just need a couple of butternut squash, a little butter, some brown sugar, and salt and pepper; that’s it! Talk about simple. But don’t let that simplicity make you think this is anything but a great-tasting dish. It’s going to make your head spin.

Despite being so easy to make, this dish makes a great centerpiece for any meal – even Thanksgiving. Just make sure you cook enough so everyone gets a half, and no-one is left out. Use as a side dish or a main meal as preferred.

Preparation time – 5 minutes

Cooking time – one hour

Ingredients

  • 2 medium butternut squashes, cut lengthways and deseeded
  • 2 tablespoons of butter
  • 2 tablespoons of brown sugar
  • Sea salt and freshly ground black pepper

Instructions 

  1. Preheat your oven to 400 degrees F.
  2. Place the halved squash flesh-side up on a greased baking tray
  3. Put one teaspoon of butter and sugar in the hollow of each squash
  4. Season with salt and pepper to taste
  5. Roast for 50-60 minutes, until the flesh is tender
